Stir-fly curry tofu with edamame Beans.
As the weather is getting hot, I tried to minimise my time in the kitchen with fire. I love to make a batch of these and eat it cold for 2-3 days as a side dish.
❶First, pan fried the tofu cubes until they are slightly browned.
❷Then add in frozen edamame Beans and some chopped pepper.
❸Stir fried until all the beans are defrost and cooked. Add in mild curry powder, salt and pepper to your taste.
So simple and so yummy!
